Whilst I was waiting for the Stroganoff to cook (a massive 2 hours) earlier this week, I needed something quick for my tea. Lurking in the depths of my old mother hubbard cupboard was a tin of Salmon. I don’t usually buy tinned Salmon as it’s no where near as nice as fresh salmon, so this was a good way to use it up! This was a fairly satisfactory store cupboard emergency dinner (and breakfast)! I’m sure this would work with tuna too.
Ingredients (makes 4 patties)
- Tin of Wild Salmon (200g)
- 1 Egg
- 1/4 finely diced onion
- Clove Garlic
- Tamari (wheat free soy sauce)
- Blend tin of salmon (200g) with an egg, onion, crushed garlic clove, coriander, black pepper, tablespoon of Tamari.
- Heat a good dollop of coconut oil in a frying pan and drop 4 dessertspoon-fuls of mixture into the frying pan. Flip half way through cooking (a few minutes each side).
Served here with a carrot, cabbage and tomato salad drizzled with tahini
