Smoked Salmon and Red Pepper Courgette ‘Pasta’

This dish is so pretty, I just had to take a picture of it and stick it on the blog.  Not a particularly complicated recipe, but it was quick to make, and made a very tasty and light dinner (required as I had already eaten rather a lot of raw cake mixture…when will I learn?)

Ingredients (serves 1)

  • Smoked salmon
  • 1 Courgette, made into linguine with a spiraliser
  • 1 red pepper
  • clove of garlic
  • pine nuts
  • olive oil
  • lemon juice,
  • splash of coconut milk (optional)
  • basil leaves

Method

Fry the garlic and red pepper in olive oil, meanwhile spiralise the courgette.  Add the pine-nuts to the frying pan, and then the pile of raw courgettes.  Keep moving around the pan for a few minutes until the courgettes start to soften.  At this stage I splashed in some coconut milk (as it was open in the fridge).  Once you’re satisfied with the texture of the dish stir through the smoked salmon, a squeeze of lemon juice and some shredded basil leaves.
