Melon, Mint and Ginger salad

When I think of fruit salad I think of a 1980s-style mix of mandarins, grapes and soggy apples in a overly sweet orange juice dressing.  This melon dish on the other hand is light, refreshing, sweet and with just the right amount of kick from the fresh ginger.  Ginger has about a billion health benefits too!

As I mentioned in my Chermoula Chicken post, a few weeks back I went to one-off evening cooking course, and this what we made for dessert!  Since I’m usually a complete chocoholic when it comes to being inventive with dessert, this made for a really light, refreshing and tasty change.  This would be perfect served up at a summer BBQ.    It’s really simple to do to, and also gave me the perfect excuse to buy yet another tool for my kitchen – a melon baller…

Ingredients (serves 6-8)

  • 2 ripe melons (I used Cantaloupe, though a combo of Cantaloupe and Galia would both look and taste great)
  • 1 cup warm water
  • 1 Tablespoon Organic/Raw honey
  • 1 inch fresh ginger root, grated
  • Handful of fresh mint


  • With a melon baller (or tea spoon), scoop out balls of the melon flesh and place in a large bowl.
  • Meanwhile, warm a cup of water in a saucepan along with the honey and heat until the mixture thickens into a light syrup.
  • Grate an inch of fresh ginger and mix in with the syrup.
  • Pour the ginger syrup over the melon, and stir in a large handful of chopped mint.
  • Spoon into dishes to serve.
